hi xavier.
2020 was so long ago.
for really fast postgres to handle a lot of transactions, our cloud is now
linux (ubuntu)
we are using multiple nVME M.2 SSD drives with theoretical throughput of 20gigabit/sec transfer rate
lots of ram. (all our servers have 256 gigabit of ram)
many cores. currently that are like 40 cores AMD chips
with that, we support hundreds of databases for customers
if you just need one a single business that is off the shelf and pretty freaking fast, look to the Mac studio (https://www.apple.com/ca/mac-studio/)
12 core starts at 1999 USD
24 core starts at 3999 USD
they have read/write speeds of over 5gigabit/sec. (which is 1/4 speed of nVME M.2 drives)
not a lot of difference between linux and mac as far as installling after configuring postgres. Mac has a double click installer, linux you have to use apt-get. but once installed, configuration is the same (just different directories) and starting/stopping the database is the same
